
This new Fino is part of the Williams & Humbert Vintage Collection , wines produced statically by the winery's oenologist, Paola Medina, who was recently highlighted in Decanter magazine for her work with biologically aged vintage wines.
Made with 100% Palomino fino from the Pagos de Añina and Carrascal, and with a very low production, this vintage has a high concentration, minerality and a wild touch.

VITICULTURE | Made with 100% Palomino Fino from the Pagos de Añina and Carrascal. The vineyards are between 20 and 60 years old and are planted on Albariza soils. 2012 vintage: very dry year. Rainfall: 398 mm and very warm. Very low production with a 30% lower yield. Wine with high concentration, minerality and a wild touch. |
VINIFICATION | The vintage project is based on selecting musts from old vines from the Añina and Carrascal estates, which are fortified to 15º or 18º and left untouched to study their evolution, spontaneously developing biological ageing or oxidative ageing. Unlike traditional sherry wines, the ageing system is not “Solera and Criaderas”, it is an exception as it is a static ageing wine, meaning that in the corresponding year’s harvest, free-run must was selected, which was alcoholised and over time spontaneously due to the presence of flor yeasts in the environment, the flor veil developed naturally and if the flor did not develop, oxidative ageing began. In the 2012 harvest, free-run musts were selected. It was fermented at 17-22oC and fortified at 15.5. Over time, the yeast veil developed spontaneously due to the presence of flor yeast in the environment. Biological and static aging for 4 years in 600L American oak barrels. Classified as Fino in 2016. |
