Also known as Chimay Bleue, Chimay Blue is a authentic trappist beer Strong Dark Ale style, with a rich yeasty aroma with floral notes and a bitter taste. It is made using water obtained from the abbey's wells and a strain of its own yeast. The aromatic and bitter touch of this beer is provided by the extra hops. It was first brewed in 1948, as a seasonal beer to celebrate Christmas. It was so successful that the monks of Chimay decided to add it to their catalogue permanently.
