
Colosia Pedro Ximenez is a sweet wine made in the DO Jerez.
It is made by drying the grapes using the sun-drying method, which consists of spreading the grapes out and letting them dehydrate under the sun. In this way, the sugar is naturally concentrated and a sweet wine is obtained.
