It comes from a single vineyard, but there is one particularity: this plot has many differences in soil and sunlight. So they make three different harvests from the same vineyard, to obtain three different grapes with the aim of producing a complex Xarel lo 100% from the same vineyard.
This winery produces clean, natural wines, showing an obsession with maintaining the structure of the wine and avoiding excessive oxidation, and they work with wild yeast.
