Delamain Pale & Dry XO is a cognac. It is a historic winery.
This cognac is aged in very old oak barrels. 350-litre barrels, well used, which over time have lost the sensations of wood, giving way to new nuances of lemon, orange peel, flowers,... giving a unique personality to this cognac .
Once the ageing process is complete, the final blend is made by mixing cognacs of similar ages. This blend rests for a couple of years, finishing off the refinement. After this time, small quantities of old "weak" cognacs are added to reduce the 50º of its natural alcohol content to the final 40º.
