White wine from a 0.5 hectare plot, located below a small mountain range (Serre in Provençal) in Roaix. A land of calcareous sabres, typical of the erosion caused by the passage of the river and its modification over the centuries, with soils of Miocene origin.
90% clairette
10% bourbon
Vineyards with an average age of 50 years.
Fermentation in clay pots and large semi-used barrels. Daily co-battonage.
Aged for 10 months in clay pots and non-new Stockinger barrels.
Very fine and elegant wine, with notes of white flowers.
