
Maceration in old clay jars without correction. After a slow spontaneous fermentation of 4 weeks, it remained in the same jar in contact with its own skins for 110 days. It is directly poured into a single barrel with manual stirring to induce natural decantation. Light filtration prior to bottling, wine made with minimal intervention and without any additives. Aged for 6 months in third-use French oak barrels and 66 months refining in the bottle before going on the market. Intense on the palate, with notes of pastries, orange peel and pollen on a citrus and herbal background. Present and pleasant tannins make it long and deep.
